Marinated Grilled Chicken and Halloumi Salad

Ingredients

The marinade

  • ½ cup extra virgin olive oil
  • ¼ cup chopped fresh parsley
  • ½ teaspoon crushed red pepper
  • 14 ounces boneless chicken
  • 4 ounces Halloumi cheese (sliced) or Feta cheese (do not grill the feta)

The salad

  • 5 ounces baby arugula
  • ½ cup grape tomatoes (sliced)
  • ¼ cup balsamic vinegar dressing

Instructions

  1. Whisk together olive oil, parsley, and crushed red pepper in a small bowl.
  2. Place cheese in a shallow dish and cover with 3 tablespoons of the marinade. Put the chicken in a separate dish and pour the remaining marinade over it. Marinate for at least 30 minutes or overnight.
  3. Heat a grill or grill pan over medium-high heat. Grill the chicken for 4 to 5 minutes per side until cooked through.
  4. Remove the chicken from the grill and tent with foil.
  5. Grill the cheese slices for 2 minutes per side.
  6. In a large bowl, toss together arugula, tomatoes, and balsamic vinegar dressing.
  7. Divide the salad among plates and top with the grilled chicken and cheese slices. Serve warm.
