Marinated Grilled Chicken and Halloumi Salad

The marinade

Halloumi cheese (sliced) or Feta cheese (do not grill the feta)
The salad

baby arugula

grape tomatoes (sliced)

balsamic vinegar dressing
Instructions
- Whisk together olive oil, parsley, and crushed red pepper in a small bowl.
- Place cheese in a shallow dish and cover with 3 tablespoons of the marinade. Put the chicken in a separate dish and pour the remaining marinade over it. Marinate for at least 30 minutes or overnight.
- Heat a grill or grill pan over medium-high heat. Grill the chicken for 4 to 5 minutes per side until cooked through.
- Remove the chicken from the grill and tent with foil.
- Grill the cheese slices for 2 minutes per side.
- In a large bowl, toss together arugula, tomatoes, and balsamic vinegar dressing.
- Divide the salad among plates and top with the grilled chicken and cheese slices. Serve warm.
