Mediterranean Chicken and Summer Squash Noodles with Fried Halloumi

Zucchini Noodles

halloumi cheese, sliced

zucchini or yellow squash, spiralized

Instructions
- Combine chicken marinade ingredients in a zip-top bag and marinate for at least 1 hour.
- Blend green basil sauce ingredients in a food processor until smooth, adding water to thin if necessary.
- Preheat grill or skillet and grill chicken until cooked through, about 10 to 12 minutes.
- Slice Halloumi and fry in a skillet until golden on both sides.
- Add zucchini noodles to the skillet, season, and cook until warmed through.
- Toss noodles with half of the basil sauce, tomatoes, olives, and torn basil.
- Serve noodles topped with grilled chicken, Halloumi, microgreens, and remaining basil sauce.
