Mediterranean Chicken and Summer Squash Noodles with Fried Halloumi

Ingredients

Chicken Marinade

  • ¼ cup olive oil
  • 4 cloves garlic, minced or grated
  • 1 tablespoon fresh chopped oregano
  • 2 teaspoons smoked paprika
  • ½ teaspoon crushed red pepper flakes
  • 2 juices lemons
  • pounds boneless skinless chicken breast or tenders

Green Basil Sauce

  • ½ cup fresh basil
  • cup roasted cashews
  • ¼ cup fresh oregano
  • 2 tablespoons fresh chives
  • ¼ cup olive oil
  • to taste kosher salt + pepper

Zucchini Noodles

  • to taste olive oil for the pan
  • 8 ounces halloumi cheese, sliced
  • 4 zucchini or yellow squash, spiralized
  • 1 cup cherry tomatoes, halved
  • ½ cup kalamata olives, pitted
  • ¼ cup fresh basil, roughly torn

Instructions

  1. Combine chicken marinade ingredients in a zip-top bag and marinate for at least 1 hour.
  2. Blend green basil sauce ingredients in a food processor until smooth, adding water to thin if necessary.
  3. Preheat grill or skillet and grill chicken until cooked through, about 10 to 12 minutes.
  4. Slice Halloumi and fry in a skillet until golden on both sides.
  5. Add zucchini noodles to the skillet, season, and cook until warmed through.
  6. Toss noodles with half of the basil sauce, tomatoes, olives, and torn basil.
  7. Serve noodles topped with grilled chicken, Halloumi, microgreens, and remaining basil sauce.
