Ingredients

  • 1 3/4 cups oat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup sugar or sugar substitute
  • ½ cup coconut oil, melted
  • 1 cup Greek yogurt or any plain yogurt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup chocolate, chopped (optional)

Instructions

  1. Preheat the oven to 350F/180C and prepare a muffin pan with liners.
  2. In a large bowl, mix the dry ingredients together.
  3. Add the wet ingredients to the dry ingredients and mix until just combined, then fold in the chocolate.
  4. Distribute the batter evenly into the muffin liners.
  5. Bake for 20-23 minutes or until a toothpick comes out mostly clean.
  6. Let the muffins cool in the pan for 10 minutes before transferring to a wire rack.
