Instructions
- Preheat the oven to 400°F and prepare a muffin pan with cooking spray or paper liners.
- In a large bowl, whisk together the whole wheat flour, all-purpose flour, brown sugar, baking powder, and baking soda.
- In a medium bowl, combine the oats, shredded coconut, Greek yogurt, mashed banana, canola oil, egg, and vanilla extract.
- Pour the wet mixture into the dry mixture and stir until just moistened, being careful not to over-mix.
- Fold in the diced mango gently.
- Divide the batter evenly among the muffin cups.
- Bake for 17 to 20 minutes, or until a toothpick inserted into the center comes out clean.
