Ingredients

The dry ingredients

  • ½ cup whole wheat flour
  • ½ cup all-purpose flour
  • ¾ cup brown sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 cup old fashioned oats
  • cup dried shredded coconut

The wet ingredients

  • 1 6 oz container plain non-fat Greek yogurt
  • 1 cup mashed ripe banana
  • ¼ cup canola oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup diced mango

Instructions

  1. Preheat the oven to 400°F and prepare a muffin pan with cooking spray or paper liners.
  2. In a large bowl, whisk together the whole wheat flour, all-purpose flour, brown sugar, baking powder, and baking soda.
  3. In a medium bowl, combine the oats, shredded coconut, Greek yogurt, mashed banana, canola oil, egg, and vanilla extract.
  4. Pour the wet mixture into the dry mixture and stir until just moistened, being careful not to over-mix.
  5. Fold in the diced mango gently.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 17 to 20 minutes, or until a toothpick inserted into the center comes out clean.
