Instructions
- Preheat the oven to 350°F and prepare a muffin tin with cooking spray or liners.
- Blend the applesauce and dates in a food processor until well mixed, then add bananas and vanilla and blend until smooth.
- Toast the shredded coconut in the microwave or a pan until lightly browned.
- In a large bowl, combine all dry ingredients until well mixed.
- Pour the wet ingredients into the dry ingredients and stir until just combined, then fold in the mango chunks.
- Pour the batter into the muffin tin and bake for 22 to 25 minutes, or until a knife comes out clean.
- Cool in the muffin tin for 5 minutes before transferring to a cooling rack.
