Ingredients

Wet Ingredients

  • ½ cup unsweetened applesauce
  • 10 pieces dates
  • cups mashed very overripe bananas (about 3 medium bananas)
  • 1 tsp vanilla

Dry Ingredients

  • 1 cup almond meal
  • 1 heaping cup rolled oats, ground into a flour
  • ½ cup rolled oats
  • ½ cup shredded unsweetened coconut, toasted
  • ¼ cup ground flaxseed
  • tsp baking soda
  • ½ tsp salt
  • ¼ tsp cinnamon

Add-ins

  • 1 cup chopped mango

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin with cooking spray or liners.
  2. Blend the applesauce and dates in a food processor until well mixed, then add bananas and vanilla and blend until smooth.
  3. Toast the shredded coconut in the microwave or a pan until lightly browned.
  4. In a large bowl, combine all dry ingredients until well mixed.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined, then fold in the mango chunks.
  6. Pour the batter into the muffin tin and bake for 22 to 25 minutes, or until a knife comes out clean.
  7. Cool in the muffin tin for 5 minutes before transferring to a cooling rack.
