Ingredients

The filling

  • 1 tablespoon olive oil
  • 1 pound ground chicken
  • 1 teaspoon coarse salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon ground black pepper
  • ½ cup ketchup
  • cup brown sugar
  • 2 tablespoons yellow mustard

The assembly

  • 4 whole grain hamburger buns
  • to taste pickles

Instructions

  1. Heat the olive oil in a medium skillet over medium heat.
  2. Add the ground chicken and cook for 6-8 minutes until browned, breaking it up as it cooks.
  3. Stir in the salt, onion powder, garlic powder, and black pepper.
  4. Add the ketchup, brown sugar, mustard, and 3 tablespoons of water, then bring to a high simmer.
  5. Reduce to a low simmer and cook for 3-4 minutes, stirring frequently until the sauce thickens.
  6. Taste and adjust seasoning if necessary.
  7. Scoop the sloppy joe mixture onto the bottom buns, top with pickles, and place the top bun on.
  8. Serve immediately.
