Homemade Gluten-Free Graham Crackers

Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together the oat flour, almond flour, baking powder, baking soda, and salt.
- Add the sugar and cinnamon, and whisk again.
- Incorporate the cold butter and mix until a mealy texture forms.
- Add the cold milk, honey, and vanilla, and mix until combined.
- Form the dough into a ball, wrap in plastic wrap, and chill in the fridge for 1-2 hours.
- Roll out the chilled dough on a floured surface to about ⅛-inch thick.
- Cut the dough into 3-inch squares and poke holes in each square with a fork.
- Sprinkle with sugar if desired.
- Bake for 13-15 minutes, rotating halfway through, until golden and firm.
- Allow the crackers to cool before separating.
