Ingredients

  • 1 ½ cup gluten-free oat flour
  • ¼ cup blanched fine almond flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ⅛ – ¼ teaspoon salt
  • ⅓ – ½ cup raw sugar
  • ¼ teaspoon cinnamon
  • 3 Tablespoons cold butter
  • 6 Tablespoons cold non-dairy milk
  • 1 Tablespoon honey
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together the oat flour, almond flour, baking powder, baking soda, and salt.
  3. Add the sugar and cinnamon, and whisk again.
  4. Incorporate the cold butter and mix until a mealy texture forms.
  5. Add the cold milk, honey, and vanilla, and mix until combined.
  6. Form the dough into a ball, wrap in plastic wrap, and chill in the fridge for 1-2 hours.
  7. Roll out the chilled dough on a floured surface to about ⅛-inch thick.
  8. Cut the dough into 3-inch squares and poke holes in each square with a fork.
  9. Sprinkle with sugar if desired.
  10. Bake for 13-15 minutes, rotating halfway through, until golden and firm.
  11. Allow the crackers to cool before separating.
