Ingredients

  • cups gluten-free flour
  • ¾ tsp cinnamon
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup melted coconut oil
  • ½ cup maple syrup
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 375°F and grease a cookie sheet.
  2. Mix the dry ingredients in a small bowl and set aside.
  3. In a large bowl, combine the coconut oil, maple syrup, and vanilla extract, then add the dry ingredients and mix until a ball forms.
  4. Place the dough ball on the cookie sheet and roll it out into a rectangle about ¼-inch thick.
  5. Cut the dough into 2½-inch squares without cutting all the way through, and pierce the tops with a fork.
  6. Bake for 10 minutes, then turn off the oven and leave the crackers inside with the door ajar for an additional 5 minutes.
  7. Remove the crackers, re-cut them if necessary, and transfer to a wire rack to cool completely.
