The dough

The topping

Instructions
- Combine flour, brown sugar, baking soda, and salt in a food processor or mixer.
- Add butter and mix until the mixture resembles coarse meal.
- In a separate bowl, whisk together honey, milk, and vanilla, then add to the flour mixture until barely combined.
- Pat the dough into a rectangle, wrap in plastic, and chill for 2 hours or overnight.
- Prepare the topping by mixing sugar and cinnamon in a small bowl.
- Roll out the dough and cut into rectangles, placing them on baking sheets.
- Sprinkle the topping over the crackers and chill for 30 to 45 minutes.
- Preheat the oven to 350°F and bake the crackers for 25 minutes, rotating halfway through.
