Ingredients

  • ¼ cup plain hummus
  • 1 tsp spicy mustard
  • ½ tsp lemon zest
  • 2-3 Tbsp lemon juice
  • 2 tsp capers (finely minced/smashed)
  • 3 tsp brining juice from capers
  • 4-5 cloves garlic (minced)
  • 1 pinch sea salt
  • 1 pinch pepper
  • 1-2 Tbsp olive oil (optional)
  • 1-2 tsp maple syrup (optional)

Instructions

  1. Combine hummus, spicy mustard, lemon zest, lemon juice, minced capers and brining juice, and minced garlic in a bowl.
  2. Whisk thoroughly to combine, adding olive oil if desired for creaminess.
  3. Add hot water gradually to thin the dressing until pourable, whisking until smooth.
  4. Taste and adjust flavors with additional salt, pepper, lemon juice, or garlic as needed.
  5. Use immediately or store in the refrigerator for up to 5-7 days.
