Instructions
- Combine hummus, spicy mustard, lemon zest, lemon juice, minced capers and brining juice, and minced garlic in a bowl.
- Whisk thoroughly to combine, adding olive oil if desired for creaminess.
- Add hot water gradually to thin the dressing until pourable, whisking until smooth.
- Taste and adjust flavors with additional salt, pepper, lemon juice, or garlic as needed.
- Use immediately or store in the refrigerator for up to 5-7 days.
