Ingredients

The dressing

  • ½ cup raw cashews
  • 1 clove garlic
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons Dijon mustard
  • 2 teaspoons capers
  • ½ cup water
  • ½ teaspoon sea salt
  • to taste freshly ground black pepper

The salad (optional toppings)

  • 3 heads romaine lettuce
  • 2 tablespoons chives
  • 2 teaspoons capers
  • 2 radishes sliced paper-thin
  • 2 tablespoons hemp seeds
  • ¼ cup microgreens
  • to taste red pepper flakes
  • to taste sea salt
  • to taste freshly ground black pepper
  • to taste lemon wedges

Instructions

  1. Blend the cashews, garlic, lemon juice, mustard, capers, water, and black pepper until creamy.
  2. Assemble the salad with romaine and drizzle with the dressing.
  3. Top with your choice of toppings.
  4. For grilled romaine, preheat the grill, slice romaine, drizzle with olive oil and season, then grill cut-side down until charred.
