Easy Vegan Caesar Salad

Ingredients

The dressing

  • ½ cup raw cashews
  • ¼ cup Vegan Parmesan cheese
  • 6 tbsp fresh lemon juice
  • 2 tbsp sunflower oil (or EVOO)
  • 1 unit garlic scape (or 1 clove garlic)
  • ½ tsp sea salt
  • to taste freshly ground black pepper
  • ½ cup water

The salad

  • to taste chopped green onions
  • to taste more Vegan Parmesan cheese
  • to taste fresh lemon

Instructions

  1. Blend the lemon juice, water, and oil until mixed well.
  2. Add the remaining dressing ingredients and blend until smooth.
  3. Adjust seasonings as necessary and refrigerate to thicken.
  4. Mix the salad with chopped green onions, additional cheese, and lemon.
  5. Serve immediately.
