Instructions
- Cut each plantain in half lengthwise and then into 3-inch pieces.
- Place the plantain chunks in a large pot and cover with water.
- Add salt and bring to a boil over high heat, then reduce to a simmer and cook for 20 minutes until tender.
- Reserve 1 ¼ cup of the cooking water, then drain the plantains and return them to the pot.
- Mash the plantains with a potato masher or fork, adding the vegan butter and reserved water gradually until smooth.
- Season to taste and serve with optional toppings.
