Mangú (Dominican Mashed Plantains)

Ingredients

The base

  • 4 pieces Green Plantains
  • 1 ½ teaspoons Salt
  • 4 tablespoons Vegan Butter
  • 1 ¼ cups Reserved Water

Toppings

  • to taste Pickled Red Onion
  • to taste Fresh Cilantro
  • to taste Olive Oil

Instructions

  1. Cut each plantain in half lengthwise and then into 3-inch pieces.
  2. Place the plantain chunks in a large pot and cover with water.
  3. Add salt and bring to a boil over high heat, then reduce to a simmer and cook for 20 minutes until tender.
  4. Reserve 1 ¼ cup of the cooking water, then drain the plantains and return them to the pot.
  5. Mash the plantains with a potato masher or fork, adding the vegan butter and reserved water gradually until smooth.
  6. Season to taste and serve with optional toppings.
