Ingredients

BBQ Shredded Chicken

  • 1 cup barbecue sauce
  • ¼ cup apple cider vinegar
  • ¼ cup water
  • 1½ to 2 pounds boneless skinless chicken breasts
  • to taste salt and pepper
  • 3 tablespoons butter

Coleslaw

  • 3 cups pre-shredded coleslaw mix
  • ¼ cup mayonnaise
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons granulated sugar
  • to taste salt and pepper

Sandwiches

  • 6 hamburger buns
  • 6 tablespoons mayonnaise

Instructions

  1. Whisk together barbecue sauce, apple cider vinegar, and water in a bowl.
  2. Pat chicken breasts dry, season with salt and pepper, and brown in melted butter in a skillet.
  3. Pour the barbecue sauce mixture over the browned chicken, cover, and simmer until cooked through.
  4. While the chicken cooks, mix coleslaw ingredients in a bowl and adjust seasoning to taste.
  5. Once chicken is done, shred it and return it to the sauce to coat.
  6. Toast the buns under the broiler until lightly browned.
  7. Assemble the sandwiches by spreading mayonnaise on the buns, adding shredded chicken, and topping with coleslaw.
