The sandwich
Instructions
- Mix the smoked paprika, garlic powder, salt, and pepper in a small bowl.
- Cut large chicken thighs in half for sandwich-sized pieces and season with the spice mix.
- Heat cooking oil in a skillet over medium heat and cook the chicken for 5-7 minutes on each side until browned and cooked through.
- Remove chicken and brush BBQ sauce on both sides.
- In a bowl, combine coleslaw mix, sliced green onions, and ranch dressing, and stir until coated.
- Assemble the sandwiches by placing a piece of BBQ chicken on each bun and topping with ranch slaw.
