Ingredients

The chicken

  • 1 lb. boneless, skinless chicken thighs
  • 1 Tbsp cooking oil
  • ¼ cup BBQ sauce
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp pepper

The slaw

  • 7 oz. coleslaw mix
  • 2 pieces green onions, sliced
  • ¼ cup ranch dressing

The sandwich

  • 4 pieces buns

Instructions

  1. Mix the smoked paprika, garlic powder, salt, and pepper in a small bowl.
  2. Cut large chicken thighs in half for sandwich-sized pieces and season with the spice mix.
  3. Heat cooking oil in a skillet over medium heat and cook the chicken for 5-7 minutes on each side until browned and cooked through.
  4. Remove chicken and brush BBQ sauce on both sides.
  5. In a bowl, combine coleslaw mix, sliced green onions, and ranch dressing, and stir until coated.
  6. Assemble the sandwiches by placing a piece of BBQ chicken on each bun and topping with ranch slaw.
