Slow Cooker BBQ Chicken Sandwiches

The coleslaw

Instructions
- Place the chicken breast in the slow cooker.
- Whisk together the BBQ sauce ingredients, reserving ½ cup for later.
- Pour the remaining sauce over the chicken, add onions and olive oil, and cook on high for 2-3 hours or low for 6-8 hours.
- Once the chicken is shreddable, shred it and return to the slow cooker to soak up the juices.
- Heat the reserved BBQ sauce in a small pot until it bubbles.
- In a medium bowl, combine coleslaw ingredients and mix well.
- Lightly toast the sandwich rolls if desired, then assemble the sandwiches with BBQ chicken, warmed sauce, and coleslaw.
