Slow Cooker BBQ Chicken Sandwiches

Ingredients

The chicken

  • 1 small (about 8oz) boneless skinless chicken breast
  • 1 tablespoon olive oil
  • ½ cup diced onion

The BBQ sauce

  • 1 6-ounce can tomato paste
  • 2 tablespoons brown sugar
  • 1 tablespoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon Worcestershire sauce

The coleslaw

  • 1 cup shredded cabbage
  • ¼ cup grated carrot
  • 2 tablespoons mayonnaise
  • 2 teaspoons white wine vinegar
  • 1 teaspoon sugar
  • to taste salt and pepper
  • 2 sandwich rolls or hamburger buns

Instructions

  1. Place the chicken breast in the slow cooker.
  2. Whisk together the BBQ sauce ingredients, reserving ½ cup for later.
  3. Pour the remaining sauce over the chicken, add onions and olive oil, and cook on high for 2-3 hours or low for 6-8 hours.
  4. Once the chicken is shreddable, shred it and return to the slow cooker to soak up the juices.
  5. Heat the reserved BBQ sauce in a small pot until it bubbles.
  6. In a medium bowl, combine coleslaw ingredients and mix well.
  7. Lightly toast the sandwich rolls if desired, then assemble the sandwiches with BBQ chicken, warmed sauce, and coleslaw.
