Slow Cooker BBQ Chicken

Ingredients

The chicken

  • 4 lbs chicken thighs skinless/boneless

The sauce

  • ¼ cup vegetable oil
  • 5 cloves garlic finely minced
  • ½ cup brown sugar tightly packed
  • teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon granulated onion
  • 2 cups barbecue sauce (Sweet Baby Rays, plus more as needed)
  • ¼ cup apple cider vinegar
  • 2 tablespoons Worcestershire sauce

For serving

  • 12 pieces brioche buns
  • 1 lb cole slaw

Instructions

  1. Mix vegetable oil, garlic, brown sugar, apple cider vinegar, barbecue sauce, Worcestershire sauce, and seasonings in a bowl.
  2. Pat dry the chicken thighs and place them in the slow cooker, covering with the barbecue sauce.
  3. Set the slow cooker to high and cook for 2½ to 3 hours, or low for 5-6 hours.
  4. Once cooked, remove the chicken and shred it with two forks.
  5. Return the shredded chicken to the slow cooker and coat with the sauce.
  6. Let the chicken simmer for 30 minutes before serving.
  7. Toast the brioche buns and serve the pulled BBQ chicken on them with cole slaw.
