Ingredients

The chicken

  • 2-3 pounds boneless skinless chicken thighs or breasts

The marinade and spices

  • ¼ cup soy sauce
  • 2 teaspoons brown sugar or sweetener
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • to taste salt and pepper

Optional

  • 1 cup BBQ sauce

Instructions

  1. Add the chicken to the bottom of the slow cooker.
  2. Combine soy sauce with the spices and drizzle it over the chicken.
  3. Place the lid on the slow cooker and cook for 7-9 hours on Low or 4-5 hours on High.
  4. Check that the chicken reaches an internal temperature of 175 degrees for easy shredding.
  5. Shred the chicken with forks or tongs.
  6. Drizzle BBQ sauce over the chicken if desired and serve.
