Instructions
- Combine soy sauce and spices, drizzle over chicken, and marinate for 30 minutes to overnight.
- Preheat the smoker to 225 degrees.
- Add the chicken and marinade to a smoker-safe pan and smoke for 1 hour uncovered.
- Cover the pan with foil and smoke for an additional hour or until the chicken reaches an internal temperature of 175 degrees.
- Allow the chicken to rest for 10-15 minutes before shredding.
- Shred the chicken and adjust spices as necessary, adding BBQ sauce if desired.
