Ingredients

The chicken

  • 2-3 pounds boneless skinless chicken thighs or breasts

The marinade and rub

  • ¼ cup soy sauce
  • 2 teaspoons brown sugar or sweetener
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • to taste salt and pepper

Optional

  • 1 cup BBQ sauce

Instructions

  1. Combine soy sauce and spices, drizzle over chicken, and marinate for 30 minutes to overnight.
  2. Preheat the smoker to 225 degrees.
  3. Add the chicken and marinade to a smoker-safe pan and smoke for 1 hour uncovered.
  4. Cover the pan with foil and smoke for an additional hour or until the chicken reaches an internal temperature of 175 degrees.
  5. Allow the chicken to rest for 10-15 minutes before shredding.
  6. Shred the chicken and adjust spices as necessary, adding BBQ sauce if desired.
