Healthy BBQ Chicken Thighs

Ingredients

The chicken

  • 8–10 pieces boneless and skinless chicken thighs

The spices

  • 1 tsp chili powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp ground mustard
  • 1 tsp salt
  • 1 tsp pepper

The sweetener

  • 2 tbsp coconut sugar (or brown sugar)

The sauce

  • ½ cup BBQ sauce

Instructions

  1. Trim the chicken thighs as needed and place them in a large Ziploc bag.
  2. In a small bowl, combine all spices and coconut sugar.
  3. Pour the spice mixture into the Ziploc bag and shake until the chicken is completely coated. Refrigerate for 4-24 hours.
  4. When ready to grill, let the chicken sit at room temperature for about 15 minutes.
  5. Heat the grill to 400°F and wipe it down with oil or nonstick spray.
  6. Cook the chicken on direct heat for about 4 minutes on each side, then flip and cook for another 4 minutes on the first side.
  7. Move the thighs off direct heat, baste each side with BBQ sauce, and cook for another 1 minute on each side until the internal temperature reaches 165°F.
  8. Serve the chicken.
