Instructions
- Heat olive oil in a saucepan over medium heat and add onion, celery, and garlic along with salt and pepper; stir until golden.
- Add the spices, lentils, and rice, stirring to coat evenly before adding water.
- Bring the mixture to a boil, then lower the heat, cover, and simmer for about 45 minutes, or until the rice is tender and all the water has been absorbed.
- If necessary, add more water during cooking.
- Turn off the heat and let the dish sit for another 10 minutes.
- Serve and sprinkle with toasted almonds and coconut.
