Ingredients

The base

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 clove garlic, crushed
  • 1 rib celery, thinly sliced
  • ¼ tsp cinnamon
  • ¼ tsp four spice
  • to taste salt & pepper

The main ingredients

  • ¼ cups du Puy lentils
  • ½ cup brown Basmati rice
  • 4 tbsp Sultana raisins
  • 5 dried apricots, chopped
  • cups water

Garnish

  • 8 toasted almonds, crushed
  • 1 tbsp grated unsweetened coconut

Instructions

  1. Heat olive oil in a saucepan over medium heat and add onion, celery, and garlic along with salt and pepper; stir until golden.
  2. Add the spices, lentils, and rice, stirring to coat evenly before adding water.
  3. Bring the mixture to a boil, then lower the heat, cover, and simmer for about 45 minutes, or until the rice is tender and all the water has been absorbed.
  4. If necessary, add more water during cooking.
  5. Turn off the heat and let the dish sit for another 10 minutes.
  6. Serve and sprinkle with toasted almonds and coconut.
