Perfect Basmati Rice

Ingredients

The rice

  • 7–8 cups water
  • ½ teaspoon salt
  • 1 cup basmati rice

Indian Tempering Oil

  • 2–3 tablespoons ghee (or coconut oil)
  • ½–1 teaspoon black mustard seeds
  • ½–1 teaspoon cumin seeds
  • ½–1 teaspoon fennel seeds
  • pinch salt
  • 8–10 curry leaves (or 2–3 bay leaves)

Instructions

  1. Bring water and salt to a boil.
  2. Add rice and simmer gently uncovered until tender, checking at 8-10 minutes.
  3. Drain the rice and let it stand over a strainer for 5 minutes.
  4. Optional: Heat ghee and add seeds and leaves, sautéing until seeds crackle.
  5. Place rice in a serving dish and spoon tempering oil over it.
  6. Serve immediately.
