Indian Yellow Rice

Ingredients

The rice

  • 1 cup long-grain basmati white rice
  • 2 cups reduced-sodium vegetable broth

The spices

  • ½ teaspoon ground turmeric
  • 1 stick cinnamon
  • ½ teaspoon cumin seeds
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper

The extras

  • ¼ cup golden raisins
  • ¼ cup chopped cashews

Instructions

  1. Rinse the rice under cool, running water in a fine-mesh sieve.
  2. In a medium saucepan, combine the rinsed rice and vegetable broth and bring to a boil.
  3. Once boiling, reduce the heat and stir in turmeric, cinnamon, cumin seeds, salt, pepper, and raisins.
  4. Cover and cook for 15-20 minutes until the rice absorbs all the liquid.
  5. Fluff the rice with a fork and sprinkle cashews on top before serving.
