Turmeric Brown Rice

Ingredients

The rice

  • 1 cup brown rice
  • cups vegetable or chicken broth

The aromatics

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 1 tablespoon minced garlic
  • ¼ cup cilantro, chopped

The spices

  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon sea salt
  • ½ teaspoon ground pepper

Instructions

  1. Heat olive oil in a medium saucepan.
  2. Add diced onion and cook for 8 minutes, stirring occasionally.
  3. Add minced garlic and cook for an additional minute.
  4. Add broth, brown rice, turmeric, cumin, paprika, salt, and pepper to the pan and bring to a boil.
  5. Cover, reduce heat to a low simmer, and cook for 40 minutes.
  6. Remove from heat and let steam for an additional 10 minutes.
  7. Fluff the rice and toss with chopped cilantro.
