Cilantro Lime Brown Rice

Ingredients

The rice

  • 1 ½ cups long-grain brown rice
  • 1 leaf bay leaf

The seasoning

  • ¼ cup chopped fresh cilantro
  • 2 tablespoons lime juice
  • 1 ½ teaspoons lemon juice
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon extra-virgin olive oil
  • ½ teaspoon fine sea salt

Instructions

  1. Boil a large pot of water and add the rinsed rice and bay leaf.
  2. Boil for 30 minutes, stirring occasionally.
  3. Drain the rice and return it to the pot, covering it for 10 minutes off the heat.
  4. Discard the bay leaf and fluff the rice with a fork.
  5. Stir in cilantro, lime juice, lemon juice, olive oil, and salt, adjusting salt to taste.
  6. Cover until ready to serve.
