Cilantro Lime Brown Rice

Instructions
- Rinse the rice under cold running water for 30 seconds.
- Boil 12 cups of water in a large pot over high heat.
- Add the rice to the boiling water and stir once, then boil uncovered for 30 minutes.
- Strain the rice in a strainer and let it drain for 10 seconds.
- Return the rice to the pot off the heat, cover, and let it steam for 10 minutes.
- Fluff the rice with a fork.
- In a small bowl, combine the liquid coconut oil, chopped cilantro, salt, and lime juice.
- Pour the mixture over the rice and toss to combine, adjusting seasoning to taste.
