Cilantro Lime Brown Rice

Ingredients

The rice

  • 1 cup long-grain brown rice

The flavoring

  • ½ lime juice
  • 1 tbsp salt
  • 3 tbsp fresh chopped cilantro
  • 2 tbsp coconut oil

Instructions

  1. Rinse the rice under cold running water for 30 seconds.
  2. Boil 12 cups of water in a large pot over high heat.
  3. Add the rice to the boiling water and stir once, then boil uncovered for 30 minutes.
  4. Strain the rice in a strainer and let it drain for 10 seconds.
  5. Return the rice to the pot off the heat, cover, and let it steam for 10 minutes.
  6. Fluff the rice with a fork.
  7. In a small bowl, combine the liquid coconut oil, chopped cilantro, salt, and lime juice.
  8. Pour the mixture over the rice and toss to combine, adjusting seasoning to taste.
