Roast Jerk Plantains

Ingredients

The plantains

  • 2-3 pieces Plantains
  • ¼ cup Oil

The seasoning

  • to taste Jerk Seasoning

The vegetables (optional)

  • ½ medium Onion
  • 1 piece Bell pepper (green or red)

Instructions

  1. Cut both ends off the plantains to make peeling easier.
  2. Slit a shallow line down the long seam of the plantain and peel it back.
  3. Cut the plantains in half crossways, then lengthways, into uniform strips.
  4. Line a baking sheet with foil or parchment paper and arrange the plantains in a single layer.
  5. Sprinkle the desired amount of jerk seasoning on the plantains.
  6. Bake in a preheated oven at 425℉ (220℃) for about 20 minutes, turning once until slightly brown.
  7. In a skillet, heat oil and sauté the sliced onion for about a minute.
  8. Add the bell pepper and sauté for another minute.
  9. Serve the sautéed vegetables with the roasted plantains.
