Roast Jerk Plantains

Instructions
- Cut both ends off the plantains to make peeling easier.
- Slit a shallow line down the long seam of the plantain and peel it back.
- Cut the plantains in half crossways, then lengthways, into uniform strips.
- Line a baking sheet with foil or parchment paper and arrange the plantains in a single layer.
- Sprinkle the desired amount of jerk seasoning on the plantains.
- Bake in a preheated oven at 425℉ (220℃) for about 20 minutes, turning once until slightly brown.
- In a skillet, heat oil and sauté the sliced onion for about a minute.
- Add the bell pepper and sauté for another minute.
- Serve the sautéed vegetables with the roasted plantains.
