Buffalo Grilled Chicken Flatbread Pizza

Ingredients

  • 2 pieces 100% whole-grain 100-calorie flatbreads
  • ¼ cup canned tomato sauce
  • 1 tablespoon Buffalo hot sauce
  • 5 ounces sliced grilled chicken
  • ½ teaspoon smoked paprika
  • ½ cup shredded Italian 6-cheese blend with part-skim mozzarella
  • 2 pieces scallions
  • to taste expeller-pressed canola oil spray or olive oil
  • to taste inner yellow celery leaves

Instructions

  1. Preheat the oven to 400°F and move the oven rack to the bottom shelf.
  2. Spray or brush the smooth sides of the flatbreads with oil and place them oil-side down on a large cookie sheet.
  3. Combine the tomato sauce and Buffalo sauce, then spread it on the flatbreads, leaving a ¼ inch border around the edges.
  4. Dust the chicken with smoked paprika and sprinkle it on top of the sauce.
  5. Add the cheese and green scallions on top.
  6. Bake on the lower oven rack until the cheese is bubbly and the edges are golden, about 10 minutes.
  7. Sprinkle with celery leaves and cut each flatbread into 4 pieces.
