Ingredients

Baked Tomatoes

  • 1 medium tomato, sliced in half
  • 1 teaspoon breadcrumbs (whole grain, vegan)
  • a pinch seasoning salt
  • 2 teaspoons chopped fresh parsley
  • 1 teaspoon extra virgin olive oil

Accompaniments

  • 1 cup canned vegetarian beans in tomato sauce
  • 2 whole grain English Muffins, toasted
  • ½ avocado, sliced into 4 slices
  • 2 leaves lettuce

Instructions

  1. Preheat the oven to 400°F.
  2. Place halved tomatoes on a baking sheet, cut side up.
  3. Sprinkle each tomato half with breadcrumbs, seasoning salt, chopped parsley, and olive oil.
  4. Bake the tomatoes for about 15 minutes until browned on top but still firm.
  5. Heat the canned vegetarian beans.
  6. Toast the English muffins.
  7. Assemble the plate with one baked tomato half, ½ cup of heated beans, two toasted muffin halves, avocado slices, and a lettuce leaf.
