Instructions
- Preheat the oven to 400°F.
- Place halved tomatoes on a baking sheet, cut side up.
- Sprinkle each tomato half with breadcrumbs, seasoning salt, chopped parsley, and olive oil.
- Bake the tomatoes for about 15 minutes until browned on top but still firm.
- Heat the canned vegetarian beans.
- Toast the English muffins.
- Assemble the plate with one baked tomato half, ½ cup of heated beans, two toasted muffin halves, avocado slices, and a lettuce leaf.
