Instructions
- Heat olive oil and butter in a skillet over medium heat, then add onion, rosemary, sage, and garlic powder; cook until onions are translucent.
- Add mushrooms, bell pepper, and spinach to the skillet; cook until tender.
- Whisk eggs with salt, pepper, and sage in a bowl, then scramble in a pot with butter until cooked through.
- Spoon a third of the vegetable mixture and a third of the scrambled eggs onto each tortilla, top with feta, and roll into a burrito.
- Cook each burrito in a skillet for 2 minutes on each side, then let cool slightly before cutting in half.
