Ingredients

The filling

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 cup onion, chopped
  • 1 teaspoon rosemary
  • 2 teaspoons sage
  • 1 teaspoon garlic powder
  • 1 cup mushrooms, sliced
  • 1 cup bell pepper, chopped
  • 1 cup spinach

The eggs

  • 4 large eggs
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 dash sage

The burrito assembly

  • 4 large tortillas
  • cup feta cheese, crumbled

Instructions

  1. Heat olive oil and butter in a skillet over medium heat, then add onion, rosemary, sage, and garlic powder; cook until onions are translucent.
  2. Add mushrooms, bell pepper, and spinach to the skillet; cook until tender.
  3. Whisk eggs with salt, pepper, and sage in a bowl, then scramble in a pot with butter until cooked through.
  4. Spoon a third of the vegetable mixture and a third of the scrambled eggs onto each tortilla, top with feta, and roll into a burrito.
  5. Cook each burrito in a skillet for 2 minutes on each side, then let cool slightly before cutting in half.
