Vegan Mushroom Bacon Breakfast Toast

Instructions
- Preheat the oven to 375°F and prepare a baking sheet.
- Chop the mushrooms and spread them on the baking sheet, drizzling with olive oil and seasoning with salt and pepper.
- Bake the mushrooms for 12-15 minutes, flipping halfway through until browned and crispy.
- Remove the mushrooms and toss them with coconut sugar, garlic and/or onion powder, smoked paprika, and liquid smoke.
- Return the mushrooms to the oven for an additional 5 minutes to caramelize.
- Prepare the toast by oiling a separate baking sheet and placing the bread and tomatoes on it.
- Bake the toast and tomatoes together, allowing the tomatoes to blister and the toast to brown.
- Assemble the toast by spreading hummus on each piece, topping with blistered tomatoes, mushroom bacon, herbs, and seasoning.
