Ingredients

Marinade

  • 2 Tbsp avocado oil
  • 1 ¼ Tbsp maple syrup
  • 1 ¼ Tbsp apple cider vinegar
  • 2 ½ Tbsp coconut aminos (or tamari)
  • 1 heaping tsp smoked paprika
  • 1 tsp sea salt
  • 1 dash liquid smoke
  • 1 rounded tsp chickpea (or soy) miso paste
  • ¾ tsp ground black pepper

Mushrooms

  • 2 medium portobello mushrooms

For Serving (optional)

  • roasted sweet potatoes
  • fresh parsley

Instructions

  1. Preheat the oven to 400°F (204°C) and prepare a baking sheet with parchment paper and a cooling rack on top.
  2. In a mixing bowl, whisk together the marinade ingredients until well combined.
  3. Taste the marinade and adjust flavors as desired.
  4. Add the sliced mushrooms to the marinade and toss to coat thoroughly.
  5. Arrange the mushrooms in a single layer on the cooling rack or directly on the parchment paper.
  6. Bake for 15-25 minutes, checking for doneness and crispiness every 5 minutes after the first 15 minutes.
  7. Once baked to your liking, remove from the oven and enjoy immediately with your favorite dishes.
