Ingredients

  • 5 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon vinegar
  • ¾ cup full-fat coconut milk

Instructions

  1. Preheat the oven to 350°F and prepare a mini muffin pan.
  2. In a medium bowl, whisk together all dry ingredients except the chocolate chips.
