Ingredients

Dry Ingredients

  • cup coconut flour
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon sea salt
  • ½ cup chocolate chips

Wet Ingredients

  • 4 large eggs, lightly beaten
  • ¼ cup unsweetened applesauce
  • ½ cup coconut oil, melted
  • cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 teaspoons apple cider vinegar

Instructions

  1. Preheat the oven to 350°F and line a muffin tin with paper liners.
  2. In a medium bowl, combine the dry ingredients and set aside.
  3. In another bowl, whisk together the wet ingredients until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until mixed.
  5. Fill the muffin tins about ½ full with the batter.
  6. Bake for 18-20 minutes until golden brown and a toothpick comes out clean.
  7. Let cool on a drying rack and serve warm or at room temperature.
