Ingredients

  • ¼ cup coconut oil
  • ½ cup Bob's Red Mill Coconut Flour
  • ½ teaspoon baking powder
  • ¼ teaspoon kosher salt
  • ½ cup mashed ripe banana
  • 4 large eggs
  • 6 tablespoons honey or pure maple syrup
  • 1 teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • cup blueberries or mix-ins of choice

Instructions

  1. Preheat the oven to 400°F and prepare a muffin pan.
  2. Melt the coconut oil and let it cool.
  3. Mix the dry ingredients in one bowl.
  4. In another bowl, combine the mashed banana, eggs, honey, and extracts.
  5. Add the cooled coconut oil to the wet ingredients and mix well.
  6. Combine the wet and dry ingredients, whisk until smooth, then fold in blueberries.
  7. Scoop the batter into the muffin cups and fill them about ¾ full.
  8. Bake for 16 to 18 minutes until a toothpick comes out clean.
  9. Cool the muffins in the pan for a few minutes before transferring them to a wire rack.
