Instructions
- Preheat the oven to 400°F and prepare a muffin pan.
- Melt the coconut oil and let it cool.
- Mix the dry ingredients in one bowl.
- In another bowl, combine the mashed banana, eggs, honey, and extracts.
- Add the cooled coconut oil to the wet ingredients and mix well.
- Combine the wet and dry ingredients, whisk until smooth, then fold in blueberries.
- Scoop the batter into the muffin cups and fill them about ¾ full.
- Bake for 16 to 18 minutes until a toothpick comes out clean.
- Cool the muffins in the pan for a few minutes before transferring them to a wire rack.
