Ingredients

  • ½ cup coconut flour, sifted
  • ½ teaspoon baking powder
  • 6 large eggs, room temperature
  • ¼ cup butter, softened and salted
  • ¼ cup milk of choice
  • cup honey
  • ½ teaspoon vanilla extract
  • 1 cup blueberries, optional

Instructions

  1. Preheat the oven to 180C/350F and line a 12-count muffin pan with muffin liners.
  2. In one bowl, combine coconut flour and baking powder.
  3. In another bowl, whisk together eggs, softened butter, milk, honey, and vanilla extract.
  4. Gently fold the dry ingredients into the wet ingredients until combined, adding blueberries if desired.
  5. Distribute the batter among the muffin liners.
  6. Bake for about 15 minutes or until a toothpick comes out mostly clean.
  7. Let the muffins cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
