Instructions
- Preheat the oven to 180C/350F and line a 12-count muffin pan with muffin liners.
- In one bowl, combine coconut flour and baking powder.
- In another bowl, whisk together eggs, softened butter, milk, honey, and vanilla extract.
- Gently fold the dry ingredients into the wet ingredients until combined, adding blueberries if desired.
- Distribute the batter among the muffin liners.
- Bake for about 15 minutes or until a toothpick comes out mostly clean.
- Let the muffins cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
