Ingredients

Dry Ingredients

  • cups cassava flour
  • ¾ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ cup dairy-free chocolate chips

Wet Ingredients

  • 2 large eggs, lightly beaten
  • 2 cups ripe bananas, mashed (about 1 cup) or unsweetened applesauce
  • ½ cup melted coconut oil or ghee
  • ½ cup maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin with liners or non-stick spray.
  2. In a large bowl, combine the dry ingredients and mix well.
  3. In a separate bowl, mix the wet ingredients until well combined.
  4. Pour the wet mixture into the dry ingredients and stir until just combined. Add water if the batter is too dry.
  5. Fill the muffin tin with the batter and bake for 25 minutes or until golden brown.
  6. Serve warm or at room temperature.
