Instructions
- Preheat the oven to 325°F and prepare a muffin tin with liners or grease it.
- In a high-speed blender, combine bananas, eggs, non-dairy milk, maple syrup, and vanilla extract and blend until smooth.
- In a large bowl, mix the dry ingredients: flour, coconut sugar, cinnamon, baking soda, and sea salt until combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to over-mix.
- Fold in the chopped walnuts and chocolate chips gently.
- Divide the batter evenly among the muffin cavities and top each with a banana coin.
- Bake for 20 minutes or until a toothpick comes out clean.
- Allow the muffins to cool slightly before serving.
