Ingredients

  • 3 large bananas, very ripe
  • 2 units eggs or flax eggs
  • ¼ cup non-dairy milk
  • 2 tablespoons maple syrup
  • 1 ½ teaspoons vanilla extract
  • 2 cups gluten-free 1:1 flour or all-purpose flour
  • ¼ cup coconut sugar
  • 1-2 scoops collagen powder (optional)
  • 1 ½ teaspoons cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon sea salt
  • ½ cup walnuts, chopped
  • ¾ cup chocolate chips

Instructions

  1. Preheat the oven to 325°F and prepare a muffin tin with liners or grease it.
  2. In a high-speed blender, combine bananas, eggs, non-dairy milk, maple syrup, and vanilla extract and blend until smooth.
  3. In a large bowl, mix the dry ingredients: flour, coconut sugar, cinnamon, baking soda, and sea salt until combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to over-mix.
  5. Fold in the chopped walnuts and chocolate chips gently.
  6. Divide the batter evenly among the muffin cavities and top each with a banana coin.
  7. Bake for 20 minutes or until a toothpick comes out clean.
  8. Allow the muffins to cool slightly before serving.
