Instructions
- Preheat the oven to 350°F.
- Grease the muffin tin with butter or oil.
- In a small bowl, combine the mashed bananas, vanilla extract, melted butter, beaten eggs, and unsweetened applesauce.
- In a separate large mixing bowl, combine the flour, protein powder, sweetener, salt, baking soda, and cinnamon.
- Add the wet ingredients to the dry ingredients and mix with a spoon, adding water if needed.
- Fold in the chocolate chips.
- Pour the batter into the muffin tins, filling them about ¾ full.
- Bake for 18-25 minutes until a toothpick comes out clean.
- Cool before serving.
