Ingredients

Wet Ingredients

  • 2 cups mashed ripe bananas

  • tablespoons unsweetened applesauce
  • 2 large eggs, beaten
  • 2 tablespoons water

Dry Ingredients

  • 2 cups all-purpose flour
  • 93 grams protein powder
  • 1 teaspoon ground cinnamon
  • ½ cup sweetener or sugar
  • ½ teaspoon salt
  • 1 teaspoon baking soda

Add-ins

  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F.
  2. Grease the muffin tin with butter or oil.
  3. In a small bowl, combine the mashed bananas, vanilla extract, melted butter, beaten eggs, and unsweetened applesauce.
  4. In a separate large mixing bowl, combine the flour, protein powder, sweetener, salt, baking soda, and cinnamon.
  5. Add the wet ingredients to the dry ingredients and mix with a spoon, adding water if needed.
  6. Fold in the chocolate chips.
  7. Pour the batter into the muffin tins, filling them about ¾ full.
  8. Bake for 18-25 minutes until a toothpick comes out clean.
  9. Cool before serving.
