Ingredients

  • 1 large ripe banana
  • ¾ cup egg whites
  • ½ cup plain non-fat Greek yogurt
  • ¾ cup oats
  • 2 scoops vanilla protein powder
  • 2 tbsp turbinado sugar
  • 1 tsp baking soda
  • ¾ tsp cinnamon

Instructions

  1. Preheat the oven to 350 degrees.
  2. Spray a 12-tin muffin tray with cooking spray.
  3. Blend all ingredients together until smooth.
  4. Divide the mixture evenly among the muffin tins.
  5. Place a thin slice of banana on top of each muffin.
  6. Bake for 20 minutes or until cooked through.
