Instructions
- Preheat the oven to 350°F and line a muffin tin with liners, spraying them with non-stick spray.
- In a large bowl, mash the bananas until smooth.
- Whisk in the egg, maple syrup, and vanilla extract, then set aside.
- In a separate bowl, mix the oat flour, protein powder, baking powder, baking soda, and salt.
- Combine the dry ingredients with the wet ingredients and stir until mixed.
- Fold in the chocolate chips.
- Scoop the batter into the muffin tins, filling each about ¾ full, and add more chocolate chips on top if desired.
- Bake for 15 minutes or until a toothpick comes out clean.
