Protein Banana Muffins

Ingredients

  • 2 large bananas
  • 1 large egg
  • 2 tbsp maple syrup
  • ½ tsp vanilla extract
  • ¾ cup oat flour
  • ½ cup protein powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¼ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a muffin tin with liners, spraying them with non-stick spray.
  2. In a large bowl, mash the bananas until smooth.
  3. Whisk in the egg, maple syrup, and vanilla extract, then set aside.
  4. In a separate bowl, mix the oat flour, protein powder, baking powder, baking soda, and salt.
  5. Combine the dry ingredients with the wet ingredients and stir until mixed.
  6. Fold in the chocolate chips.
  7. Scoop the batter into the muffin tins, filling each about ¾ full, and add more chocolate chips on top if desired.
  8. Bake for 15 minutes or until a toothpick comes out clean.
