Ingredients

The kale

  • 1 bunch kale

The gomasio

  • 2 cups raw sesame seeds
  • 1 tablespoon celtic sea salt

Instructions

  1. Rinse the kale, slice it into ribbons, and steam over medium heat for 3-5 minutes until bright green, then leave in the pot to maintain warmth.
  2. Place sesame seeds in a 9-inch cast iron skillet over medium heat and roast for 10 minutes, stirring constantly until golden brown.
  3. Transfer the roasted sesame seeds and salt to a suribachi or mortar and pestle and grind them into a coarse meal.
  4. Once cooled, transfer the gomasio to a glass container.
  5. Place the steamed kale in a serving dish and sprinkle with gomasio.
