Boiled Peanuts With Chile Salt

Ingredients

The peanuts

  • 4 cups fresh (green) or raw (unroasted) shell-on peanuts

The seasoning

  • 4 tsp kosher salt
  • 2 Tbsp coriander seeds
  • 1 Tbsp flaky sea salt
  • tsp red chile powder

Instructions

  1. Combine peanuts, kosher salt, and 1 Tbsp. coriander seeds in a saucepan, cover with water, and let sit for 3 hours.
  2. Bring the mixture to a boil, then reduce heat and simmer until peanuts are tender (2 hours for fresh, 4-4½ hours for raw). Drain and let cool.
  3. Crush the remaining coriander seeds and mix with sea salt and chile powder.
  4. Toss the peanuts with most of the spice mixture and serve with the remaining mixture on the side.
