Boiled Peanuts With Chile Salt

The peanuts

fresh (green) or raw (unroasted) shell-on peanuts
The seasoning

kosher salt

coriander seeds

flaky sea salt

red chile powder
Instructions
- Combine peanuts, kosher salt, and 1 Tbsp. coriander seeds in a saucepan, cover with water, and let sit for 3 hours.
- Bring the mixture to a boil, then reduce heat and simmer until peanuts are tender (2 hours for fresh, 4-4½ hours for raw). Drain and let cool.
- Crush the remaining coriander seeds and mix with sea salt and chile powder.
- Toss the peanuts with most of the spice mixture and serve with the remaining mixture on the side.
