Peanut Chili Crunch

dried Thai red chiles, crushed (or sub 2–4 tablespoons chili flakes)

roasted peanuts (skinless)

Optional Additions

dried shrimp or anchovy powder

Instructions
- Remove the stems from the chiles, crumble them, and dry fry over medium heat until toasted for about 3-4 minutes.
- Place the toasted chiles in a food processor and pulse.
- Add the roasted peanuts to the processor and pulse a few times.
- Transfer the mixture to a bowl and add the crispy shallots and salt, mixing well.
- Feel free to add any optional ingredients to taste.
