Mango Sticky Rice

Ingredients

The rice

  • 1 cup glutinous rice
  • 2-3 pieces pandan leaves

The topping

  • 2-3 pieces fresh ripe mangoes
  • 1 cup coconut milk
  • ¼ cup sugar
  • ½ teaspoon salt
  • 1 tablespoon toasted sesame seeds
  • 1 piece banana leaf

Instructions

  1. Soak the glutinous rice for at least 8 hours or overnight.
  2. Prepare a steamer with a banana leaf, drain the rice, and spread it on the leaf with pandan leaves. Steam for 20-25 minutes until translucent.
  3. While the rice cooks, cut the mangoes into small cubes and chill them.
  4. Heat coconut milk in a saucepan over low heat, adding salt and sugar until dissolved. Reserve ¼ cup for serving.
  5. Once the rice is cooked, transfer it to a bowl and mix in the remaining coconut milk until it reaches a thick porridge consistency. Let it cool to room temperature.
  6. Serve the sticky rice with chilled mangoes, drizzle with reserved coconut milk, and sprinkle with toasted sesame seeds.
