Ingredients

The rice

  • cups uncooked jasmine rice

The liquid

  • 1 15oz. can coconut milk
  • 1 cup water
  • ½ tsp salt

The sweetener and fruit

  • ¼ cup honey
  • 1 piece mango

Instructions

  1. Rinse the jasmine rice several times with cool water and drain.
  2. In a medium pot, combine the rinsed rice, coconut milk, salt, and water.
  3. Bring the mixture to a boil over medium-high heat, then reduce to low and simmer for 20 minutes without removing the lid.
  4. While the rice is simmering, cube the mango.
  5. After 20 minutes, turn off the heat and let the rice sit for an additional 10 minutes.
  6. Fluff the rice with a fork and drizzle honey over it while mixing.
  7. Add the cubed mango and stir to combine.
  8. Serve warm.
