Mango Coconut Jasmine Rice

Instructions
- Rinse the jasmine rice several times with cool water and drain.
- In a medium pot, combine the rinsed rice, coconut milk, salt, and water.
- Bring the mixture to a boil over medium-high heat, then reduce to low and simmer for 20 minutes without removing the lid.
- While the rice is simmering, cube the mango.
- After 20 minutes, turn off the heat and let the rice sit for an additional 10 minutes.
- Fluff the rice with a fork and drizzle honey over it while mixing.
- Add the cubed mango and stir to combine.
- Serve warm.
