Ingredients

The rice

  • 2 cups jasmine rice

The liquids

  • 1 can coconut milk
  • cups coconut water or water

The seasoning

  • ¾ tsp salt

Instructions

  1. Rinse the jasmine rice under cold water until it runs clean and drain well.
  2. In a medium non-stick saucepan, heat the coconut milk and coconut water over medium-high heat until boiling.
  3. Add salt to the boiling liquids, then add the rice and bring to a simmer.
  4. Reduce the heat to low, cover, and simmer until the water is absorbed, about 17 to 20 minutes.
  5. Remove from heat and let it rest covered for 15 minutes.
  6. Uncover and fluff the rice with a fork before serving warm.
