Coconut Rice
Ingredients
The rice

uncooked long grain jasmine rice
The coconut milk

14-ounce can
full-fat coconut milk
Optional additions

teaspoon
sea salt

lime
juice and zest

½
cup
chopped cilantro

to taste
chopped cashews
Instructions
- Combine the rice and coconut milk in a pot and bring to a boil.
- Cover, reduce the heat, and simmer for 15 minutes until the liquid is absorbed.
- Remove from heat and let sit covered for 10 minutes.
- Fluff the rice with a fork.
- Optionally, stir in salt, lime juice and zest, and cilantro, seasoning to taste.
- Sprinkle with cashews and serve.
