Coconut Rice

Ingredients

The rice

  • 1 cup uncooked long grain jasmine rice

The coconut milk

  • 1 14-ounce can full-fat coconut milk

Optional additions

  • ½ teaspoon sea salt
  • 1 lime juice and zest
  • ½ cup chopped cilantro
  • to taste chopped cashews

Instructions

  1. Combine the rice and coconut milk in a pot and bring to a boil.
  2. Cover, reduce the heat, and simmer for 15 minutes until the liquid is absorbed.
  3. Remove from heat and let sit covered for 10 minutes.
  4. Fluff the rice with a fork.
  5. Optionally, stir in salt, lime juice and zest, and cilantro, seasoning to taste.
  6. Sprinkle with cashews and serve.
