Instructions
- Pat the chicken thighs dry and season with salt and Cajun seasoning.
- Mix flour, paprika, cayenne, white pepper, granulated onion, and garlic powder in a bowl, then dredge the chicken in the flour mixture.
- Heat oil in a skillet and fry the chicken until golden brown, about 4 to 5 minutes per side, then remove from skillet.
- Sauté the onions in the same skillet for 2-3 minutes, then add garlic and thyme, cooking for an additional 3-5 minutes.
- Melt butter in the skillet, then add the remaining seasoned flour to form a paste.
- Slowly whisk in chicken broth and milk until smooth, cooking until slightly thickened.
- Return the sautéed onions to the skillet, mix well, and season to taste.
- Add the browned chicken back to the skillet, bring to a boil, then reduce heat to simmer for 30-45 minutes.
- Adjust seasonings as needed before serving.
