Ingredients

The chicken

  • 3 pounds chicken thighs, bone-in and skinless
  • to taste salt
  • 2 teaspoons Cajun seasoning

The coating

  • ¾ cup all-purpose flour
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon white pepper
  • 1 teaspoon granulated onion
  • 2 teaspoons garlic powder

The cooking

  • 3 tablespoons vegetable oil
  • 1 large onion, thinly sliced
  • 3-4 cloves garlic, minced
  • 1-2 teaspoons fresh thyme, minced

The gravy

  • 3 tablespoons unsalted butter
  • 3 cups chicken broth
  • ¾-1 cup milk
  • to taste salt and pepper

Instructions

  1. Pat the chicken thighs dry and season with salt and Cajun seasoning.
  2. Mix flour, paprika, cayenne, white pepper, granulated onion, and garlic powder in a bowl, then dredge the chicken in the flour mixture.
  3. Heat oil in a skillet and fry the chicken until golden brown, about 4 to 5 minutes per side, then remove from skillet.
  4. Sauté the onions in the same skillet for 2-3 minutes, then add garlic and thyme, cooking for an additional 3-5 minutes.
  5. Melt butter in the skillet, then add the remaining seasoned flour to form a paste.
  6. Slowly whisk in chicken broth and milk until smooth, cooking until slightly thickened.
  7. Return the sautéed onions to the skillet, mix well, and season to taste.
  8. Add the browned chicken back to the skillet, bring to a boil, then reduce heat to simmer for 30-45 minutes.
  9. Adjust seasonings as needed before serving.
