Ingredients

The chicken

  • 6 pieces chicken thighs
  • ¼ cup maple syrup
  • 2 tablespoons Dijon mustard
  • 1 teaspoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon pepper

The salad

  • 1 cup orzo
  • 2 large carrots
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon pepper

The vegetables

  • 4 small zucchini
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the carrots by cutting them and tossing with olive oil, salt, and pepper, then roast them in the oven.
  3. Prepare the zucchini by slicing and tossing with olive oil, salt, and pepper, then add to the oven after the carrots have been roasting for a bit.
  4. Boil water for the orzo and cook according to package instructions.
  5. Prepare the maple Dijon sauce by mixing maple syrup, Dijon mustard, olive oil, salt, and pepper.
  6. Coat the chicken thighs with the maple Dijon sauce and place them in the oven after the carrots are done.
  7. Finish preparing the Carrot and Orzo Salad while the chicken and zucchini are roasting.
  8. Once everything is cooked, portion into meal prep containers.
