Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the carrots by cutting them and tossing with olive oil, salt, and pepper, then roast them in the oven.
- Prepare the zucchini by slicing and tossing with olive oil, salt, and pepper, then add to the oven after the carrots have been roasting for a bit.
- Boil water for the orzo and cook according to package instructions.
- Prepare the maple Dijon sauce by mixing maple syrup, Dijon mustard, olive oil, salt, and pepper.
- Coat the chicken thighs with the maple Dijon sauce and place them in the oven after the carrots are done.
- Finish preparing the Carrot and Orzo Salad while the chicken and zucchini are roasting.
- Once everything is cooked, portion into meal prep containers.
